We kick things off early, folks. For those die-hard fishermen, we're talking 4:55 AM start times for our longer trips. Not a morning person? No sweat. We've also got 6:00 AM to 1:00 PM options that'll still get you plenty of time on the water. We run from June 4 to July 31, which means you're hitting prime time for some of our best fish. You pick your poison - inshore or offshore trolling - and we'll make it happen. We provide all the gear you need, and there's bait available on board. Just don't forget your sunscreen and hat, 'cause the Florida sun doesn't mess around!

Techniques That Land Fish

Alright, let's talk shop. When we're offshore, we're usually trolling - that means dragging lines behind the boat as we cruise. It's a killer method for nabbing those speedy mackerel and mahi-mahi. Gag Grouper

Gag Grouper are a prized catch in our deeper waters. These bruisers can grow over 50 pounds, though most are in the 10-30 pound range. Look for them around rocky bottoms, reefs, and wrecks in 60-250 feet of water. Spring and fall are great times to target Gags as they move between deeper and shallower areas. Anglers love the challenge of pulling these powerful fish up from the bottom - it's a true test of strength. For bait, nothing beats live pinfish or mullet. My go-to rig is a circle hook with a heavy fluorocarbon leader. Once hooked, get 'em up quick or they'll try to dive back into their rocky hideouts. The meat is excellent - firm, white, and mild. Just remember to check regulations, as seasons and limits can change. Gag Grouper fishing is some of the most rewarding bottom fishing we do around here.

Greater Amberjack

Greater Amberjack, or "AJs", are the bulldogs of the reef. These powerful fish average 20-50 pounds but can exceed 100. You'll find them around deep wrecks and reefs in 150-300 feet of water. Spring and fall are prime seasons as they move to shallower structures. Anglers target AJs for their sheer power - hooking one is like being tied to a freight train. Live bait like blue runners or speedo mackerel works best. My tip: use a wind-on leader for added abrasion resistance against their rough mouths. Once hooked, it's a battle of wills to keep them from diving back to the wreck. AJs will test your stamina and gear to the limit. The meat is good eating when prepared right, but be aware of size and bag limits. If you want a true test of offshore fishing strength, Amberjack are hard to beat.

King Mackerel

King Mackerel, or "Kings", are the big cousins of Spanish Mackerel. These sleek predators can top 50 pounds, though most run 15-30 pounds. You'll find them in open water from near-shore out to about 150 feet deep. Kings are here spring through fall, with peak action in summer. Anglers love Kings for their blistering runs and aerial acrobatics when hooked. Trolling with live bait like blue runners or cigar minnows is deadly effective. My local tip: look for Kings around bait schools, especially near tide lines or color changes in the water. When a King hits, it's like somebody threw a switch - your reel will scream as line peels off. Be ready for multiple runs before you get these toothy critters to the boat. Kings make great smoked fish dip, just be aware they can have higher mercury levels.

Mahi Mahi or Common Dolphinfish

Mahi Mahi are one of the most exciting fish we target offshore. These colorful acrobats average 15-30 pounds but can top 50. Look for them around floating debris and weed lines, often in 100-400 feet of water. Summer and early fall are prime Mahi seasons here. Anglers love Mahi for their spectacular aerial displays and beautiful colors - they light up like neon when excited. They're also excellent table fare. To catch 'em, try trolling with ballyhoo or tossing live bait near floating structure. My local trick: always have a pitch bait ready. When you hook one Mahi, others often follow it to the boat. A quick toss can turn a single fish into a double or triple. The fight is fast and furious, with Mahi known for tail-walking across the surface. It's an offshore fishing experience you won't forget.
